What is a BX? León’s university dinner

A BX in León, Nicaragua is a cheap fritanga dinner: a generous serving of gallo pinto, a small piece of beef or pork, salad, and tortilla. It’s known as bajón extremo and started as a way to kill hunger on a tight budget, especially among university students and anyone looking for food after a party.

Its main trait isn’t a rigid recipe, but the proportion: more gallo pinto and less meat than a full asado plate. Today some stalls and restaurants make bigger versions or add cheese, fried plantain slices, and ripe plantain.

What comes in a BX?

The version documented at the fritangas of La Estación has four parts:

  • Gallo pinto: the base, and usually the most generous part.
  • Carne asada: a small piece of beef or pork; the cut and marinade change from stall to stall.
  • Cabbage salad: usually with tomato and a sour note, to cut the fat of the meat.
  • Corn tortilla: it works as a side and as “cutlery” to build each bite.

Some stalls offer chile or onion. There are also chicken BXs and versions with fried cheese, fried plantain slices, or ripe plantain. Those variations don’t erase the original idea: a smaller, cheaper dinner than a full fritanga plate.

Why is it called bajón extremo?

The name caught on among students and young people in León. A chronicle published by HOY in 2017 places its origin about 20 years earlier at the fritanga stalls of Mercado Santos Bárcenas, known as La Estación. It’s in Barrio San Juan, east of Iglesia San Juan Bautista, and it’s still known for its late-night fritangas.

People looking for a cheap dinner called it “combito,” “B3,” “bajón,” “hilacha,” “X,” or “económico.” The most common reading is that BX means “bajón extremo,” though some vendors also remember the phrase “bacanal extremo.” There’s no official record that proves which one came first.

The idea was simple: start with gallo pinto — already affordable — and add grilled meat, salad, and tortilla. That’s why it became a practical answer to university life in León: hot, fast, and enough to finish the night.

Where does the BX fit in Nicaraguan fritanga?

The BX is a León, budget version of fritanga: grilled or griddled meat, gallo pinto, tortilla, and salad. The difference isn’t only the price; it’s the proportion. In a traditional BX, gallo pinto leads and the meat rides along.

  • It was served on a bijagua leaf. HOY’s chronicle describes the classic order: the leaf as the base, then the tortilla, the gallo pinto, the meat, and the salad. It was packaging and plate at the same time.
  • It used to cost C$5. That’s the historical figure reported for its early years; in 2017 the same source recorded prices of C$30 to C$40. Current prices depend on the stall, the meat, and the portion, so ask before you order.
  • BX can also mean “bacanal extremo.” Some accounts use that expansion of the name, while others say “bajón extremo.” Sources agree more on the plate and its student origin than on the exact meaning of the letters.
  • It didn’t stay only at La Estación. The format spread to other spots in León, including the road out toward Managua.
  • It’s still part of the city’s popular cooking. In 2025, a local vendor with more than seven years selling BX took part in León’s Festival de Fritanga y Gallopinto.

How to order a BX without getting lost

If it’s your first time, ask for it like this: “Un BX de cerdo” or “un BX de res.” Confirm which sides it includes, how many tortillas it comes with, and whether you want chile or onion. If you arrive really hungry, ask for extra meat or gallo pinto: the classic BX is meant as an economical portion, not the biggest plate on the menu.
